Coal Kitchen is an independent restaurant located in the historic Gloucester Quays, offering a vibrant setting for casual dining, after-work drinks and private events. Set within the 19th‑century Pillar and Lucy Warehouse, the venue combines exposed brick, south-facing waterside views, and locally sourced, seasonal produce to create a distinctive atmosphere. With capacity for up to 150 guests inside and additional seating across two terraces, Coal Kitchen is designed for celebrations and memorable occasions.

The Role
As Restaurant Manager, you'll be at the centre of the guest experience at Coal Kitchen. You'll lead, motivate and develop the front of house team, drive covers and revenue, and work closely with the General Manager and senior leadership to deliver a strong, consistent operation.
This is a hands-on role for someone who leads from the floor, knows their guests, supports their team with confidence and takes genuine pride in the standards of the venue every day.
What you'll be responsible for
• Leading, developing and inspiring the front of house team
• Delivering a warm, consistent and memorable guest experience
• Managing rotas, labour costs and staffing levels to budget
• Overseeing floor service and maintaining high standards of pace, presentation and hospitality
• Working closely with the kitchen team to ensure seamless service
• Driving covers, upselling and revenue opportunities across the menu
• Handling reservations, guest feedback and complaints with confidence and professionalism
• Supporting recruitment, onboarding and training of new team members
• Contributing to the wider Sunshine Hospitality Group vision alongside the General Manager
What we're looking for
• Proven experience as a Restaurant Manager or senior FOH manager in a quality, busy restaurant environment
• A natural leader who can motivate, develop and retain strong teams
• Commercially minded, with a good understanding of GP, labour, revenue and guest spend
• A genuine passion for hospitality, great food and brilliant service
• Calm and decisive under pressure, with the ability to lead from the front on a busy shift
• A strong communicator with both the team and guests
• Someone who takes pride in their venue and raises standards simply by being in the room
