A typical day in the life of a Senior Sous Chef:
- Support the Head Chef in the day-to-day running of the kitchen, ensuring smooth operations during service.
- Lead and inspire a team of chefs, kitchen porters, and other staff, creating a positive working environment.
- Act as Head Chef in their absence.
- Assist in creating innovative, seasonal menus aligned with Bannatyne's brand and customer expectations.
- Incorporate member and guest feedback to enhance menu offerings.
- Ensure all dishes are prepared to the highest standards of quality, presentation, and taste.
- Maintain portion control and minimize waste to support financial goals.
- Ensure full compliance with food safety, health, and hygiene regulations.
- Maintain a clean, organised, and safe kitchen environment.
- Manage stock levels, ordering, and inventory control to optimise kitchen costs.
- Assist in budget management, including monitoring food costs and labor efficiency.
- Support the training, and development of kitchen staff.
- Work closely with the Bannatyne team to ensure seamless service delivery.
- Liaise with other departments to support business goals and event planning.
What we are looking for:
- Food Safety Level 2 or 3 certification.
- Proven experience as a Senior Sous Chef or in a similar role within a busy kitchen environment, preferably in a hotel or restaurant setting.
- Strong knowledge of food preparation techniques, culinary trends, and kitchen equipment.
- Strong leadership and team management skills.
- Excellent organisational and multitasking skills, with the ability to work efficiently under pressure.
- Creative flair with a passion for delivering high-quality and innovative dishes.
- Flexibility to work various shifts, including evenings, weekends, and holidays.
- Knowledge of health and safety regulations, including COSHH, and a commitment to maintaining a safe working environment.
It would be desirable if you had a culinary arts degree or equivalent certification and experience with menu planning and cost control.
